World’s Best & Easiest Coleslaw

Meet the World’s Best & Easiest Coleslaw! I’m talking about a 5 minute recipe that will beat any coleslaw you’ve ever tasted before. And if you’re not a huge fan of coleslaw (I live with a few), I’m also sharing a recipe for Buttermilk Fried Chicken Tenders that will become an instant favorite.

Fried chicken, mashed potatoes, and coleslaw have always been a comfort food combo to me. I remember once being a stressed out college student home for a few days and I could smell my mom frying some chicken in the other room for dinner. Suddenly I knew everything would be okay. And it was. I’m not saying this meal will solve all of your problems, but it’s definitely going to help!

Here’s how it’s made!

Start by putting a little mayo, white vinegar, sugar, salt, and dry mustard in a bowl. Is now a good time to mention how much I love Duke’s mayonnaise? It’s not available in stores here in the Pacific Northwest, so I special order it. That’s how much I love it.

Mix the ingredients together until smooth.

Then add the secret ingredient…a prepackaged bag of coleslaw mix. Sure I could shred and chop all of that myself, but there’s no reason to. You’ll see!

I like to sort through the bag and take out any large pieces of cabbage that don’t seem to belong. Sorry my photo is a little out of focus, I haven’t mastered one hand photography yet (or probably ever, if I’m being honest).

Mix the coleslaw together with the mayo mixture and it will look a little dry at first…

Let is sit in the fridge, covered, for about 2 hours though and it will look like this! Magic. So creamy and delicious.

Serve with Fried Chicken and take a deep breath, knowing everything is going to be okay!

World’s Best & Easiest Coleslaw

1/2 cup mayonnaise
2 teaspoons white vinegar
2 tablespoons granulated sugar
1/4 tsp dry mustard
1/4 tsp kosher salt
1 bag (14 oz) shredded coleslaw mix

Directions:

In a large mixing bowl, whisk together the mayo, vinegar, sugar, dry mustard, and salt until smooth.

Add in shredded coleslaw mix and fold over with spatula until completely coated. Cover and refrigerate 2 hours. Tastes best is served within 24 hours. Enjoy!
