Let’s be honest, this time year is just too busy to make everything from scratch. That’s where these Perfect Vanilla Cupcakes come in! They’re ultra moist, with the added bonus of chocolate chips inside. I decorated this batch for Halloween, but it would be easy to switch the frosting and sprinkles and make them for any holiday.
And if you haven’t discovered Sweetapolita’s sprinkles yet, today is your day! @sweetapolita Some women collect shoes, I collect sprinkles…that’s definitely more my style! Below are some of my favorites, and try not to judge me too harshly 😆.
CUPCAKES:
4 large eggs
1/2 cup vegetable oil
1 1/2 cup water
1 package yellow cake mix (I like Betty Crocker)
1 (3.4 ounce) package vanilla instant pudding mix
1 cup semisweet or white chocolate chips
Place eggs, oil, and water in large bowl and whisk ingredients together until well combined. Add the cake mix and vanilla pudding mix and whisk just until no lumps remain.
Preheat oven to 350 and line 24 standard muffin cups with liners. Scoop batter into each cup, filling no more than ¾ of the way full (I use a cookie scoop to make this easier). Place 6-7 chocolate chips on the top of each cupcake. Bake for 20-25 minutes, until toothpick comes out clean in the middle of the cupcake. After 5 minutes carefully remove cupcakes from tin and allow to cool completely on cooling rack. Frost and decorate.
FROSTING:
1 cup salted butter, room temperature
4 cups powdered sugar
½ cup unsweetened cocoa powder
½ teaspoon table salt
1 ½ teaspoons vanilla extract
4 tablespoons milk
Place butter in large bowl and cream for several minutes. Add powdered sugar, cocoa powder, salt, vanilla, and milk. Using paddle attachment of a stand mixer (or beaters on a hand mixer), mix with lowest speed (you don’t want to start high or the sugar will fly everywhere). Once combined, turn speed to high and let mixture cream until light and fluffy (this can take several minutes). If the mixture is too stiff at this point, add another tablespoon or milk. If the mixture is too soft, add another ¼ – ½ cup of sugar.
