Southern Peach Cobbler

While living in Georgia, I learned how to make the ultimate Southern Peach Cobbler! Cooking the cobbler in a cast iron skillet makes the edges unbelievably crisp and buttery, while leaving the inside soft and tender. Everything about this recipe is straightforward and simple…melt some butter in a skillet, pour a simple batter over the top, and top with sliced peaches that are tossed in cinnamon and almond extract. I tried a hundred different versions so you don’t have to!

Here’s how it’s made!

The Peaches

Peak of the summer peaches are so sweet and flavorful, but I still like to toss them in a little cinnamon and almond extract for even more flavor. The almond is optional, but I highly recommend it.

Set this mixture aside while you make the batter. And congratulations, you just finished the hardest part of the recipe!

The Cobbler

Start by melting some butter in a cast iron skillet in the oven while the oven preheats. If you don’t own a cast iron skillet, you can also use a pie pan or a stainless steel skillet for this recipe.

Let the butter melt in the pan just until it becomes liquid. You don’t want to brown the butter at this point because the cobbler will still bake for another 50-60 minutes in the oven.

While the butter melts in the oven, mix the flour, sugar, salt, baking powder, and milk together in a medium bowl. This will become the cake layer of your cobbler

Immediately pour the batter over the melted the butter in the skillet. Do not stir the butter into the batter, the oven will take care of everything for you!

Layer 4 cups of peaches over the top of the batter and sprinkle 1/4 cup of brown sugar over the top of the peaches (more or less depending on the sweetness of your peaches).

Bake for 50-60 minutes until golden brown.

Something magic happens in the oven and all of the layers combine together perfectly and the peaches sink to the bottom of the cobbler.

Serve immediately with sweetened whipping cream or vanilla ice cream. I think that one of my top 5 favorite things in the world is when cool ice cream melts into a warm cobbler. Amazing!!

Southern Peach Cobbler

1/2 cup salted butter
1 cup granulated sugar
1 cup all purpose flour
1 tablespoon baking powder
Pinch of coarse salt
3/4 cup whole milk
4 cups peaches, peeled and sliced
1 teaspoon cinnamon
1/2 teaspoon almond extract
1/4 cup light brown sugar (more or less depending on sweetness of peaches)

Directions

  1. Melt butter in the bottom of a 10 ½” cast iron skillet.
  2. Toss peaches with cinnamon and almond extract.
  3. Mix sugar, flour, baking powder, salt, and milk. Pour over the melted butter. Do not stir, the oven will take care of everything for you!
  4. Place peaches on top of all.
  5. Sprinkle with brown sugar.
  6. Bake the cobbler at 350 for 50-60 min. or until the top is golden brown.
  7. To serve: While warm, serve topped with sweetened whipping cream or vanilla ice cream. Enjoy!

    My family of 3 loved this and ate almost the entire thing in one sitting! I was surprised to still see peaches at our local farmers’ market yesterday, given the late season. So, I snagged a few and looked for a cobbler recipe specifically for a cast-iron skillet. Your recipe did not disappoint! The almond extract was a great flavor to add to the peaches, and I put a dash in the batter. Used almond milk instead of whole milk – and added a little extra because the batter initially seemed too thick. I only had unsalted butter, so I sprinkled a little extra kosher salt in the melted butter. The salty/sweet bites were perfect!
