These little bars are a great way to kick off S’mores season! They’re soft, gooey, and everything you love about classic s’mores – without the sticky fingers and hassle of maintaining a fire. I guarantee you will love these S’mores Cookie Bars and will not regret making a batch this weekend!
Here’s how they’re made!
Cookie Base
Start by crushing some graham crackers. These crumbs will go into the cookie batter to give the base of the bars that classic s’mores flavor.
And go ahead and throw some chocolate chips and mini marshmallows into the batter as well. I told you these are amazing!
Spread the cookie layer into the bottom of a greased 9 x 13” pan. The batter is thick so it might take a little coaxing to get it to the edges. I like to use an offset spatula and the bottom of a measuring cup to help get it level and smooth.
Toppings
To get the classic s’mores flavor, break a few Hershey’s milk chocolate bars to sprinkle over the top of the batter.
And then fill the pan with more mini marshmallows and some larger graham cracker crumbs.
Bake the bars until the toppings are melted and slightly browned, and the base is set up. This should take about 20 minutes. Once the bars come out of the oven, sprinkle with a few more chocolate chips and let the bars cool for about an hour to set up before cutting.

S’mores Cookie Bars
1 cup salted butter, at room temperature
1 cup brown sugar
3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cup all purpose flour
1/2 cup graham cracker crumbs (about 4 full sheets of graham crackers)
2 teaspoons baking powder
1 teaspoon table salt
1 cup semi sweet chocolate chips, plus more for sprinkling
1 3/4 cup mini marshmallows, divided
2 (1 1/2 ounce) milk chocolate bars, broken into bite sized pieces
1 graham cracker, broken into bit sized pieces
Directions
Preheat oven to 350. Line a 9 x 13” baking pan lined with aluminum foil and sprayed with cooking spray.
Cream together the butter, brown sugar, and granulated sugar. Add the eggs and vanilla and beat until combined. Add all dry ingredients and combine until well combined. Mix in 3/4 cup marshmallows and 1 cup of chocolate chips.
Transfer dough to prepared pan and smooth out top with offset spatula. You can also use the bottom of a measuring cup to smooth out the top. Sprinkle the chocolate bar pieces, graham cracker pieces, and the remaining 1 cup of mini marshmallows. (Sometimes I even add more marshmallows!)
Bake for 20-25 minutes until edges are lightly browned. Center will still be soft. Sprinkle more chocolate chips on top to fill in gaps. Let cool about an hour before cutting. Enjoy!
