Sausage & Egg Breakfast Burritos! Is is breakfast? Is it dinner? Both! But if you’re a night owl like me, it’s probably going to be dinner. In fact, breakfast burritos are one of my favorite things to make for dinner because they come together fast and are so customizable. I use breakfast sausage, scrambled eggs, tater tots, and grated cheese as a starting point, but you can add salsa, peppers, and onions for even more flavor.
A couple of tips help will help guarantee success every time!
Sausage
Start with a favorite breakfast sausage. With only a few ingredients, the flavor of every ingredient matters a little bit more. My favorite brand of sausage is Jimmy Dean, but use whatever you like best!
Scrambled Eggs
Start by mixing your eggs with a little milk, salt, and pepper.
Next, scramble the eggs in the same pan you brown your sausage in. Not only will this result in fewer dishes to wash, but the residual oil from the cooked sausage will flavor the eggs and keep them from sticking to the pan. Win-win!
Tater Tots
I like to use frozen tater tots in these burritos (shoutout to The Pioneer Woman for giving me the idea) because they are so hands off. Tater tots can bake in the oven while you cook the sausage and eggs on the stovetop. If you can find them, Crispy Crowns are good in breakfast burritos because they give just the right amount of potato in a bite. Please don’t judge me because I’m such an expert on tater tots – haha!
Add-ins!
Let your imagine be your guide, but I highly suggest the addition of jarred jalapeno peppers, diced onion, sautéed onions and peppers, and salsa in these burritos. So good!
Layer everything together on a flour tortilla and microwave until warm and the cheese is melted (about 25 seconds).
Sausage and Egg Breakfast Burritos
Favorite Breakfast Sausage (I like Jimmy Dean)
8 eggs (beat together with 2 tablespoons of milk, 3/4 teaspoon kosher salt, 1/2 teaspoon pepper), scrambled
Tater Tots, baked until crisp in the oven (Crispy Crowns if you can find them)
Colby Jack or Cheddar Cheese, shredded
Flour tortillas
Optional Toppings:
Jarred Jalapeño Peppers
Sweet onion, diced
Onions and Peppers, sautéed
Salsa
Directions
While your tater tots bake in the oven, cook the sausage in a non-stick frying pan over medium heat. Remove sausage from the pan, and without wiping it clean, scramble the eggs over low heat in the residual oil from the sausage. This easy step will give your eggs extra flavor and keep them from sticking to your pan (and less dishes to wash!)
Build your own burrito and heat briefly in the microwave (about 25 seconds) to melt cheese. Enjoy (for breakfast or dinner)!
