Has anyone else noticed the lack of Rice Krispie Treats on the shelves lately? Well, it’s hitting our family pretty hard so I made a batch of these Salted Brown Butter Rice Krispie Treats and I don’t think I’ll ever need to buy a box again. And despite the complicated sounding name, they’re surprisingly easy to make.
In fact, the first time I made “brown butter” rice krispie treats it was by mistake – I was melting the butter as usual and walked away for a minute too long and came back to the most delicious smelling, browned butter in the universe. Give them a try, I think you’ll love them too!
Start by melting a stick of butter over medium low heat in a large pan (large enough to mix the Rice Krispie treats in). Be sure to watch the butter pretty closely while it melts because it can go from perfect to burned pretty quick.
Pull the pan off the heat when it looks about like this…
To the browned butter, add 1 1/2 bags of mini marshmallows. You’re going to save that last half bag to add with the Rice Krispie cereal to make the treats super soft.
Put the marshmallows and butter back on the stove over low heat.
Let the mixture melt slowly until it looks about like this…. Those bubbles are from melting marshmallows, not from boiling the mixture.
Pull off heat and stir in some vanilla extract and salt. Next add some Rice Krispie cereal and the remaining marshmallows.
Spread in a 9 x 13” pan lined with foil and sprayed with cookie spray. Press cereal mixture into pan.
Melt 4 ounces of semi sweet or bittersweet chocolate (I like to do this in the microwave in 30 second intervals) and drizzle over the treats with a spoon.
Sprinkle the top with whatever sprinkles you like. Part of the fun of these treats is switching up the sprinkles to celebrate different occasions…little hearts for Valentine’s Day, pink/blue for a baby shower, or even your favorite team’s colors for team treats or a watch party. The possibilities are limitless. Have fun!
Let cool completely and cut into pieces for serving! Store covered at room temperature up to 2 days!
Salted Brown Butter Rice Krispie Treats
8 tablespoons salted butter
Two (10-ounce) bags mini marshmallows, divided
1/2 teaspoon kosher salt
1/2 teaspoon vanilla extract
8 cups Rice Krispie cereal
4 ounces semi sweet or bittersweet chocolate, melted
Rainbow sprinkles, to celebrate the season or holiday
Directions:
Line a 9 x 13” pan with foil and spray with cooking spray. Set aside.
In a large pot, melt the butter over medium-low heat. Let it brown slightly and remove from heat. Stir in 1 1/2 bags of mini marshmallows, return to heat, and stir until totally melted (see pictures above). Stir in the salt and vanilla. Remove from the heat and set aside.
Pour the cereal into the marshmallow and butter mixture, folding gently the whole time until all combined. Then pour in the rest of the mini marshmallows and gently fold in. Turn into the prepared pan and press flat. Immediately top with melted chocolate, rainbow sprinkles, chocolate chips, etc.
Let cool completely, and then cut into squares.
