Peanut Butter Energy Bites

Peanut Butter Energy Bites are a great source of whole grains and protein but are so delicious I’m able to trick myself into thinking I’m eating a cookie – when I’m actually eating something a whole lot healthier.

Here’s how they’re made!

Place oats, ground flaxseed, peanut butter, chocolate chips, honey, vanilla, and coconut* in a medium bowl:

Adjustable Measuring Cup

Have you ever used an adjustable measuring cup?  It’s a real life saver when it comes to measuring sticky ingredients like honey, syrup, or peanut butter.  You just measure the ingredients inside the cup, push the bottom of the measuring cup up through the top, and watch it slide out into the bowl.  Easy!

Mix all of the ingredients until thoroughly combined and let sit in the fridge for 30 minutes before forming into balls.  I used a cookie scoop to make quick work of forming the energy bites.

Peanut Butter Engergy Bites

1 cup dry oatmeal (old-fashioned, not quick oats)
1/2 cup creamy peanut butter
1/2 cup mini chocolate chips
1/2 cup ground flaxseed or wheat germ
1/2 cup sweetened coconut flakes*
1/3 cup honey (or pure maple syrup)
1 teaspoon pure vanilla extract
Pinch of sea salt

Stir all of the ingredients together in a medium bowl until thoroughly combined. Cover and let chill in the refrigerator for half an hour. Once chilled, roll into 1″ balls. Store in an airtight container and keep refrigerated for up to 1 week.

* My kids have no idea these energy bites have coconut in them (I guess they do now!), but even the self professed coconut haters among them love these energy bites.  But if you’re really not a fan, you can substitute the coconut out for an extra 1/4 cup of peanut butter and 1/4 cup of oats.
