For the classic combination of peanut butter and chocolate, look no further than your child’s Trick or Treat bucket (parent tax!). Put aside a few packages of Reese’s Peanut Butter Cups and Reese’s Pieces tomorrow night and you can throw together these moist, One Bowl Peanut Butter Cup Brownies in no time. These brownies would also be excellent with M &M’s or even just chocolate chips. Happy Halloween!
Here is one of my all-time favorite Halloween pictures from way back before my son wanted to be a bush for Halloween every year 😉:
PEANUT BUTTER CUP BROWNIES:
1 cup salted butter
1 cup granulated white sugar
1 cup packed brown sugar
4 large eggs
1 tablespoon pure vanilla extract
1 cup all purpose flour
1 cup Dutch processed or unsweetened cocoa powder
1 teaspoon kosher salt
1 ¼ cups chopped candy bars (can also use chocolate chips, just use a total of 1 ¼ c add-ins total), divided
1. Preheat oven to 350°F. Line a 9×13″ baking pan with foil and spray with nonstick cooking spray. Set the pan aside.
2. In a medium sized pot, melt the butter on the stove over a very low heat (do not brown). Remove from heat. Once butter is melted, stir in sugars. Whisk until combined. Whisk in eggs and vanilla. Mix until it is one cohesive mixture. Stir in flour, cocoa powder, and salt. Mix until just combined. Gently fold in 1 c of peanut butter cups/Reese’s Pieces (or other combination of add-ins).
3. Spread evenly into prepared pan and sprinkle the remaining ¼ c of candy on top of the brownies.
4. Bake for 25-30 minutes on the middle rack of the oven until the brownies are just set to the touch. Don’t overtake the brownies, they will continue to cook a little after you take them out of the oven. Let cool and store covered, at room temperature, for up to 3 days.
