It’s about this time of the season when my brain begs for more cookies, but my stomach begs for me to stop. That’s where these Healthy Cookie Dough Bites come in! They’re so, so good and much easier on the stomach – haha.
This recipe is similar to my other energy bite recipe, the main difference is the oats are ground into flour in the blender before assembling. It’s a little change that makes a big difference. The oat flour gives theses bites the texture of cookie dough instead of granola. We love these Cookie Dough Bites for breakfast and snacks.

Healthy Cookie Dough Bites
1 cup oat flour*
1/2 cup creamy peanut butter
3 tablespoons honey
1 tablespoon refined coconut oil, melted (unrefined if you’re okay with a little coconut flavor)
1 teaspoon vanilla extract
Pinch of kosher salt
1/2 cup mini chocolate chips, semisweet or bittersweet
Directions:
Mix all ingredients together thoroughly in a large bowl. Form into 1” balls and place on a parchment lined baking sheet. Place the baking sheet in the refrigerator until set. Store bites in a covered container in the refrigerator for up to a week.
*You can make your own oat flour by putting a few cups of old fashioned oats in the blender or food processor and pulsing until they become fine crumbs. Measure the 1 cup after processing the oats.
Hint: Using a small cookie scoop and slightly wet hands will make the dough easier to handle!
