
If I were better at gardening I would probably have a yard bursting with beautiful cherry tomatoes about now, but I’m not 😆. Luckily the grocery store has my back so I can make this fresh Chopped Greek Salad any time of the year. I can’t emphasize enough how good this salad is. You can serve it as is, or turn it into a main dish by adding sliced, grilled chicken. Last winter I took it to a pot luck where the main dishes were smoked meats and potatoes and it was a huge hit. You should definitely add it to your arsenal today!
DRESSING:
1/4 cup best quality extra virgin olive oil
3 tablespoons red wine vinegar
1 shallot, minced
½ teaspoon honey
1/2 teaspoon salt
1/2 teaspoon pepper

8 ounce grape tomatoes, halved
1 English cucumber, cut into 1/4” pieces
1 head of Romaine lettuce, chopped into bit sized pieces
1 head of leafy green lettuce, chopped into bite sized pieces
6 ounces feta, diced into bite sized pieces
Mix dressing ingredients, set aside. Prep salad ingredients and toss with dressing just before serving.
