I made these rich and gooey Caramel Filled Brownies the night before I drove my oldest daughter 865 miles to start her sophomore year of college ❤️😩❤️. These have been some of her favorite treats since elementary school and I couldn’t miss the chance to bake them one last time before she left. (Why do our babies have to grow up and become independent human beings??) I’m already counting down the days to when she’s home for Thanksgiving and I can make all of her favorite foods again. In the meantime, I think I will have to drown my sorrows by eating more of these amazing brownies!
1 cup butter
12 oz bittersweet chocolate bars (I use Ghirardelli)
1 1/2 cup sugar
4 large eggs
1 tablespoon vanilla extract
1 1/4 cup all purpose flour
1/2 teaspoon table salt
14 oz caramel candies, unwrapped
1/3 cup heavy whipping cream
1 cup semisweet chocolate chips
Preheat oven to 350 F. Line a 9 x 13 pan with aluminum foil and spray with cooking spray.
Combine the butter and chocolate in a saucepan over very low heat, stirring until melted and smooth. Do not let simmer or boil. Remove from heat and let cool for 5 minutes.
Meanwhile, place the sugar in a large mixing bowl. Pour melted chocolate into sugar and mix until smooth. Add eggs and vanilla, mix until smooth. Add the salt and flour and mix just until combined.
Transfer half of the batter (about 2 ½ cups) to the baking pan and spread evenly. Bake for 20 minutes.
While the brownies are cooling, stir the caramels and cream together in a saucepan over low heat until melted and smooth. Do not not let simmer or boil. Immediately pour the caramel mixture over the brownies. Drop the remaining brownie batter, by the spoonful, evenly over the caramel mixture. The heat from the caramel will soften the batter and using a gentle touch, you will be able to spread the batter across the surface of the caramel. (Don’t drop in one big clump or it’ll be impossible to spread).
Sprinkle the chocolate chips on top. Bake for 20 minutes. Important: Let cool completely before serving. Store covered, at room temperature.
