BLT + Goat Cheese Sandwiches

Do yourself a favor and the next time you make a BLT sandwich, top the tomato with some goat cheese to take it to a whole new level!  Something about summer ripened tomatoes and goat cheese together really makes this sandwich special.

I know that school is winding down for most people, but it is just starting 4 days in person for my kids (for the first time in over 400 days!). So that means the last few weeks of school will feel more normal and I can eat amazing sandwiches like this every day without hearing my kids whine for dino nuggets and macaroni and cheese – haha!

The small details make all the difference in this sandwich, so be sure to take the extra few minutes to toast the bread and season the tomato with a little salt and pepper. And speaking of small details…you might notice the BLT sandwich is missing the lettuce. Well….I made this my first day with no kids home with me and realized I had no lettuce. But I wasn’t about to drive to the store for lettuce the first time I was home alone in a year, so I ate the sandwich just the way it was and it was amazing!

BLT + Goat Cheese Sandwiches

2 slices of wheat bread, toasted
Tomato, sliced 1/4” thick
Bacon
Goat Cheese, room temperature
Mayo (Duke’s if you can find it!)
Kosher salt and pepper

Directions

Slice the tomato and sprinkle with salt and pepper, let sit while toasting the bread.

Toast 2 slices of bread in the toaster. After removing the bread from the toaster, slather one side of each slice of bread with mayo.

Place tomato slices on one slice of bread. Dot with pieces of goat cheese.

Place bacon and lettuce (not pictured in my photo – oops) on the other slice of bread and press together to make a sandwich. So good!!
