Apple Almond Chicken Salad is a great way to celebrate the start of apple season! It’s savory, crunchy, and a little bit sweet. Through the years I’ve made it for picnics, lunch with friends, and baby showers. (Which is just now making me wonder if women like chicken salad more than men do? Hmmm… 🤔). Serve it on croissants, soft rolls, focaccia bread, or even on a bed of lettuce if you’re watching your carbs. I hope it becomes a new favorite of yours too!
The Ingredients
Making this chicken salad couldn’t be easier! I start with shredded rotisserie chicken (thank you Costco!). To the shredded chicken, add Granny Smith apples (unpeeled), almonds, celery, red onion, parsley, green onion, and a little salt and pepper.
You will notice this recipe has ranges given for some of the ingredients. I do this so you can customize the salad to be exactly how you like it. If you want it a little sweeter, go ahead and add the full cup of apple. If you’re watching your sodium intake, add a little less salt. Apple Almond Chicken Salad keeps well in the fridge for up to 3 days, so it’s a great make ahead option. Enjoy!!
Apple Almond Chicken Salad
2 chicken breasts cooked and shredded (I use a rotisserie chicken!)
3/4 – 1 cup unpeeled Granny Smith apple, 1/4” dice
1/2 cup almonds, toasted
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped (soak in water for 10 minutes to remove any sharp bite, drain before adding to salad)
2 tablespoons Italian parsley, chopped
1 green onion, thinly sliced
3/4 – 1 teaspoon kosher salt
Pepper to taste
1/2 – 3/4 cup mayonnaise, to taste (light mayo works great!)
Directions:
To toast the almonds: Scatter on a baking sheet and bake at 350 F for 7-9 minutes until toasty and brown.
Mix all of the ingredients together and serve on focaccia bread, croissants, soft rolls, or even a bed of lettuce! If you are making the salad a day in advance, you may want to add the almonds just before serving (so they stay nice and crunchy). Enjoy!
